Our Pinot Noir from 2008 has been slowly maturing in their barrels since the end of September. Malolactic conversion was complete in mid-October and the wine has mellowing out since then. It’s winter now, and the wines usually go to sleep around this time of year: the aromatics get muted, the palate becomes is a little disjointed as the flavors begin to integrate. Awkward, like me as a teenager.
That said, it’s never a bad time to get a taste to see how things are progressing, so I’ll have some tasting notes posted shortly. Things look great so far, so stay tuned for details.
